or 2 florets of broccoli
tbsp. double cream
ltr hot water
veg stock cube
Broccoli and Stilton Soup!

Heat 2 tbsp butter in a
large pan and gently cook 1 onion, chopped, for 4-5 minutes until softened.
Add broccoli (Chopped)ï¿½
and cover (occasionally stiring) for 5-10 minutes
Add stock cube dissolved
in 1ltr hot water
(OPTIONAL â€“ take pan from
heat and blend with a hand blender **note- make sure there is enough free depth
in pan to avoid scalding whilst blending)
Bring to the boil, then
simmer for 12-15 minutes or until the broccoli is very tender.
Crumble 200g Blue Stilton
into the soup and stir until melted.
